Summer Salads, Sunscreens and Meal Prep for Healthy Living
On Memorial Day, we remembered and honored so many who gave their lives in service to our country, and honored those who have gone before us. Today would have been my Dad’s 109th birthday and my Mom’s 105th. Yes, they shared the same birthday. Despite the many years that have passed, their expressions still come up in family conversations, like my Dad saying “home again, jiggety, jig” or my Mom saying ”aargh” when she was frustrated. That’s become a classic.
In this article, I’ve included a link to my advice on meal prep and recipes for 2 spring salads that take a place at the table either as sides or as a main course for lunch.
Today’s Two Topics
Have you ever had so much sun that you looked like a lobster? Sad to say, I have and am now paying the price for it. I shied away from sunscreens because of their questionable chemicals, but now we have an organization that screens and recommends safe products. Follow this link for the latest info on safe sunscreens and become a user.
The second topic is important for everyone. It’s both a summary and a link to RFK Jr.’s report on the state of American children’s health and how we got here. The report links the uptick in ultra-processed food to the rapid escalation of childhood diseases in the US. It will be an uphill battle to deal with Corn Growers United, Pharmaceutical companies, and Pesticide companies to evoke change. Change needs to happen quickly if we want to stop this trajectory. We can all play a part in this change by moving away from ultra-processed foods and spending our grocery budget on simple, whole foods. Local, organic is best. Here is the link.

Salads
My CSA (Community Supported Agriculture) share started this week and for several weeks will be filled with delicious spring greens and herbs, all of which make beautiful salads.
Spring Greens and Gorgonzola
a bunch of mixed greens, a handful of pea shoots, chopped cherry tomatoes, thinly sliced fresh radish, chopped spring onion (white and green sections) a sprinkle of walnuts, and a square of gorgonzola cheese, crumbled. Add dressing.
Protein Packed Spring Green Salad
A bunch of mixed greens, baby spinach, sliced beets, shredded carrots, spring peas, poached chicken, and 1/2 cup cannellini beans. Add dressing.
